Description:

Polylysine is a homopolymer of L-lysine, as a natural, toxicologically safe, antibacterial food preservative. It is a natural substance from microbial metabolism. E-polylysine can inhibit the growth of Gram(+) and Gram(-) bacteria such as E. Coli and Bacillus subtilis, yeast, moulds, lactic acid bacteria, thermophilics such as B,stearothermophilus, bacillus-bacilli., and Staphlacoccus aureus.

Compared to traditional preservatives, E-polylysine shows the advantages on safety, good heat tolerance and solubility in water, and extensive antimicrobial ability against Gram+ bacteria and fungi. It can be sterilized along with the raw material, especially as the safe food preservative without side-effects.

Physical properties:  

1. light yellow power, slightly bitter

2. soluble in water, slightly soluble in ethanol

3. Melting Point: 172.8 °C

4. Molecular Weight: 4700 g/mol (degree of polymerization = 30)

5.PH: 4.5

6. stable when heated (120°C,20min or 100°C,30min)
