Purple Sweet Potato Color is a kind of natural edible color which is made from crushed purple sweet potato through an extraction, filtration, refining, concentration and sterilizing processes. Its main compositions are anthocyanins and flavones. This product is red purple liquid or powder which is easily dissolved in water and water-alcohol solutions. With the increase of pH values, the color is changing gradually: from red to red purple, later purple-green, and finally green. It has good heat and light resistance and strong anti-oxidation ability.
